Serving this beautiful layered smoothie by Birgitta Höglund is a great way
 to add some colour and innovation to your healthy spread. 


Makes 6 - 8 Servings

Green layer:

6 ripe avocados

500 ml coconut milk

50 g baby spinach leaves

100 ml freshly pressed orange juice

120 ml cold pressed coconut oil

Red layer:

300 g blueberries, raspberries or blackberries

A few drops of peppermint oil


Mix all the ingredients for the green layer in a blender.

Put 1/3 of the smoothie into a bowl and mix the rest with the berries and a few drops of peppermint oil.

Pour the red layer in glasses with a slice of kiwi attached to the side. Fill up with the green layer.

This smoothie becomes quite thick, so enjoy it with a spoon.

If you want your smoothie a bit thinner, blend in some coconut water or more orange juice.
