Butternut soup is a real crowd-pleaser. Try this one from Marlien Wright at The Yoga Kitchen for its added health kick...


1 yellow or brown onion, finely diced
1 large butternut, peeled and cubed
1 thumb sized piece of ginger, finely grated
3 cloves of garlic, finely grated
1 tablespoon of turmeric
Juice of 1 small lemon
2 tablespoon of honey
2 teaspoons of finely ground black pepper
4 cups of chicken bone broth (or veggie stock for a vegetarian or vegan version)
Spring onions, finely chopped to garnish


1. Fry the onion in some ghee or coconut oil, when the onion becomes soft and transcluent add the garlic, ginger and turmeric, sauté on low heat for approximately 3 minutes, then add the cubed butternut and all the other ingredients except for the spring onions.

2. Cover with the lid and allow it to simmer over low heat for 30 minutes.

3. Take the pot off the heat and allow to slightly cool for 5 minutes and then using a hand blender whizz until you have a silky smooth soup. Serve with your chopped green onions and a drizzle of olive oil.
